This week’s sauce is a true autumnal showstopper! Inspired by Jean George’s iconic Squash on Toast recipe, my Jammy Butternut Spread recipe elevates this fall veg to a whole new level. Roasted butternut squash is mashed with sweet, jammy onions, shallots and garlic that have been cooked down in maple syrup and vinegar. Wondering what to do with this absolutely sublime concoction? Make a tartine! Lightly toast a piece of sourdough spread a little feta or goat cheese on it, and top with Jammy Butternut Spread and sliced avocado. Or serve it up with crostini and feta spread to your lucky friends by the firepit. Trust me, this is a once-a-year gift that will have you scraping the bottom of the jar with a spoon!
